Tasting Notes
The 2021 Gratitude is a skin-fermented Pinot Gris-Gewurztraminer-Sauvignon Blanc field blend. Fermented to dryness, it's a mouthful of marmalade, tangerine, baked peaches, lime, zesty pineapple, and florals. It's unfined and unfiltered, and in a very raw form; you'll see the fermentation sediment in the bottom of the bottle. If you like a richer taste, give the wine a gentle rock to mix it up into the wine for more body and a brioche aroma.
Process
Pètillant-Naturel, or "natural sparkling", is made in a simple method that was the way sparkling wine was produced before the development of the modern Champagned method. A pét-nat is bottled just at the end of the first fermentation (as opposed to a Champagne method, where the first ferment is completed prior to transfer to the bottle for a second ferment inside it), which captures the bubbles produced by the yeast.
