2017 Riesling
For us, this wine was experimental: we wanted to see what happened when you take cool climate Riesling fruit, press it and barrel ferment it in neutral barrels (i.e., with no oak flavor). The result is a beautiful Riesling wine with excellent fruit character, superb balance of acidity and mouthfeel. During the wine making process this wine was produced in three barrels that were pared down to two barrels once primary fermentation completed. The wine aged in barrel for approximately 3 months in our cold room prior to bottling. The minute introduction of oxygen through the barrel walls and limited (unintentional) malolactic fermentation contribute to a soft and round mouthfeel.
Tasting Notes
Aromas of peach and pineapple with hints of minerality. On the palate this wine has notes of pineapple, pear and candied fruits with an exceptional mouthfeel that is both round (viscous, soft) and sharp.
