2017 Sauvignon Blanc
This wine was produced with a focus on preserving the aromatic character and flavor of the fruit. The fruit was harvested and destemmed so that we could soak the fruit in the juice to maximize the extraction of aromatic components that originate from the skins. The fruit was then pressed off and the juice was move to steel tanks where we minimize oxygen exposure and begin fermentation. The fermentation takes place over a long period in our cold room to slow the fermentation and preserve aromatics.
