Stainless steel pinot gris, aged 7 months. Heady aromas of white blossom flowers with delicious flavors of pear, lime zest, and white fruit. Perfect to sip on a hot summer day as it finishes with refreshing acidity.

Stainless steel rose, aged 7 months. The Jose Rose is a blend of 5 grapes: merlot, cabernet sauvignon, cabernet franc, carmenere, and norton. A fruity bouquet and flavor profile of peach, strawberry, citrus fruits. A Provence style rose, it is bone dry with crisp acidity making it a perfect pairing for Virginia summertime!

WINEMAKING NOTES
Our Cabernet Franc is made from 100% grapes grown in Timberville, Virginia, located in the Shenandoah Valley. After hand-harvesting and sorting in the vineyard, the grapes were gently transported via small lugs to the winery where they were destemmed and sorted again on a vibrating sorting table before being sent to stainless steel tank by gravity. After 3 days of cold maceration, the alcoholic fermentation was started and occurred around 55 degrees F. Pump-overs were done every day during the fermentation and, also during the warm post-maceration, that lasted about 1-2 weeks. This wine was then pressed and sent to barrels where the malolactic fermentation occurred rapidly. After racking from malolactic fermentation, the wine returned to barrels to age for 22 months entirely in French oak Bordeaux barrels (34% new, 66% neutral oak barrels). No fining of the wine occurred. After the appropriate aging time elapsed, the wine was simply racked, sterile-filtered, and hand-bottled on the Estate.

100% Estate grown Cabernet Sauvignon. Deep dark red color, with black currant and black fruit notes. Hints of licorice and violet, with a great tannic structure.

After hand- harvesting and sorting in the vineyard, the grapes were gently transported via small lugs to the winery where they were destemmed and sorted again on a vibrating sorting table before being sent to an open- top barrel fermenter. After 1 day of cold maceration, the alcoholic fermentation was started and occurred around 05 degrees F. Punchdowns were done by hand every day during the fermentation and, also during the warm post-maceration, that lasted 8 days. This wine was then pressed and sent to barrel where the malolactic fermentation occurred rapidly. After racking from malolactic fermentation, the wine returned to barrel to age for 20 months entirely in French oak Bordeaux barrel (66% new French oak,
34% neutral French oak barrel). No fining of the wine occurred. After the appropriate aging time elapsed, the wine was simply racked, sterile-filtered, and hand-bottled on the Estate.

After racking from malolactic fermentation, the wine returned to barrels to be aged for 25 months entirely in French oak Bordeaux barrels (36% new and 64% in neutral French oak). No fining of the wine occurred. After the appropriate aging time elapsed, the wine was simply racked, sterile-filtered, and hand-bottled on the Estate.

WINEMAKING NOTES
K2 is a Bordeaux blend made from 21% grapes from Casanel Vineyards and 79% grapes from 2 Virginia vineyards. The blend consists of 52% Merlot, 27% Cabernet Franc, 15% Cabernet Sauvignon, 3% Carménère and 3% Petit Verdot. These different varietals were picked at different times to respect their respective ripeness time and were treated separately in tanks and in barrels until blending.

After hand-harvest and sorting in the vineyard, the grapes were gently transported in small lugs to the winery where they were destemmed, sorted again on a vibrating sorting table before to be sent in a stainless steel tank by gravity. After 2 to 4 days of cold maceration depending on the varietal, the alcoholic fermentation was started and occurred around 75 to 80 degrees F. Pump-overs were done every day during the fermentation and also during the short warm post-maceration, that lasted about 2 to 3 weeks (again depending on the varietal – Cabernet Sauvignon and Petit Verdot had both a longer post-maceration). The different wines were then pressed and sent to barrels where the malolactic (ML) fermentation occurred rapidly. After racking from ML, these wines returned to barrels to be aged for 21 months entirely in French oak Bordeaux barrels (30% new, 30% in 1-year old, 30% in 2-years old and 10% in 3-years old barrels). The final blending occurred at the end of February 2017. After a small fining, the wine was racked, filtered and bottled.

Full of rich red and black fruits with luscious acidity, this wine has an excellent balance with a touch of red pepper and cocoa nibs to the finish. Named after Katie & Katell who create this blend each year together. The two of them exponentially increasing each other's winemaking skills with every wine we make.

100% Estate Petit Verdot grapes. Aged for 26 months in French oak. Flavors of black plum, blueberry, cassis, violets, and dark chocolate.

Forgoing cold maceration, the alcoholic fermentation was started and occurred around 75 degrees F. Pump-overs were done every day during the fermentation and, also during the short warm post-maceration, that lasted about 2 weeks. This wine was then pressed and sent to barrels where the malolactic fermentation occurred rapidly. After racking from malolactic fermentation, the wine returned to barrels to be aged for 26 months entirely in French oak Bordeaux barrels (50% new and 50% in neutral French oak). No fining of the wine occurred. After the appropriate aging time elapsed, the wine was simply racked, filtered, and hand-bottled on the Estate.
