Golden Russet and Porter’s Perfection are heirloom cider apples originating from western New York and southwest England (respectively) in the late 1800s. Porter’s Perfection, brings acidity, tannic complexity and depth of finish, while Golden Russet, lends spiciness and a honeycomb sweetness and its own subtle russet bite. A beautiful marriage of two of our favorite apple varieties. In the cidery: Pressed in early January after 2 months of sweating. Co-fermentation, DV10 yeast. In the glass: Ripe melon on the nose, honey and earthy spice, rich dark honey, lingering woody tannins. Varieties: Golden Russet 45%, Porter’s Perfection 40%, Goldrush 15%
