2020 Pétillant Naturel – We call our Pét Nat, Santé. It is made with 100% Vidal Blanc. After harvesting, the grapes went straight to the press, bypassing the crusher. The juice was cold settled for 48 hours. The winemakers Jessi Gatewood and Joy Ting selected specialized yeast strains to enhance aromatics and highlight varietal characteristics. This sparkling wine pairs well with bay oysters, fresh shellfish, and soft cheeses. Color: Pale Straw Palate: Bright, Crisp, and Effervescent! Perfect for a hot summer day!
