A sparkling wine that is floral on the nose, with a refreshing minerality on the palate. It has a creamy finish, due to the spent yeast which remains in the bottle.

Warm vanilla, cherry and spicy notes. Medium plus body, aged in new Pennsylvania oak barrels for 2 years. Warm vanilla is present on the nose, palate and finish, with a bit of allspice and clove. Hints of dark cherry and dark fruit on the palate. Drink now or let age.
2020 was a tremendous growing year on the Niagara Escarpment. Warm sunny days, cool nights, and minimal rainfall combined to produce very high-quality fruit.
We grow 3 certified Franch clones of Cabernet Franc: 214, 327, and 623. This wine is fermented in small lots separated by vineyard block and aged for 24 months in a variety of oak barrels (20% new, 30% neutral, and the remainder somewhere in between).
The resulting wine is smooth and velvety, pairing well with pizza and grilled foods.
