2017 Barrel Select Cabernet Sauvignon
Cabernet Sauvignon
NM - Mimbres Valley
Personally selected by our Vintner and Winemaker these barrels were singled out to be unusual and more refined. These barrels included 28% oak from the Colbert forest in France, 14% from the Allier region, and 14% from American oak, and represented a range of toasts from medium to heavy. The final blend was given an additional year’s aging in barrel before bottling for a total of 55 months.
The aromas of this wine leap out of the glass. French cassis, raspberry, and plum fruit flavors are bracketed by vanilla and caramel notes. the palate is of medium plus intensity with moderate alcohol, medium body, fresh acidity, and moderate tannin level of medium chain length. Fresh raspberry dominates the palate, with secondary flavors of plum, tar, and dark chocolate. This wine has excellent aging potential (up to 10 years in the bottle).
