Our first-ever cider was a serendipitous project in 2022. My favorite vineyard, Glaciers Edge Gardens, has apple trees throughout the adjoining prairie. I went through and tasted them out of curiosity and found that some were highly tannic, some were bitter, some were acidic, and one in particular tasted just like grapefruit. Needless to say, it was intriguing. A couple months later we stopped by to pick the apples. We sweat them in our walk-in cooler for a month and then ground and pressed them to a 15 gallon damejeanne. Uncultivated apples, foraged and wild-fermented. Tannic, complex and vinous.

2020 Summer Land Brianna

A textured, focused expression of Brianna, with notes of citrus peel, bergamot, flint and ripe guava. This vintage of Summer Land could be classified as an orange wine! The grapes were fermented on skins to help them break down before they were pressed in a manual basket press. Hybrid grapes tend not to hang on to tannin. So, while there is some structure to this wine, it doesn't come across as astringent. The tropical flavors are the star here, and are backed up with a rich texture from barrel aging and malolactic fermentation.

Current notes: Still intensely tropical! Passionfruit, tropical hothouse flowers and bright acid. It's hard to put into words how thrillingly gorgeous this wine is. From release: Lively and crisp with citrus peel, bergamot, magnolia and mineral flavors.

Undisgorged and delicately sparkling, with golden apple and passionfruit notes. Brianna is such a luscious grape, and pet nat is the perfect style to showcase the kaleidoscopic flavors it offers. In addition to primary fruit flavors (passionfruit, guava, white peach), the secondary flavors released through fermentation are equally compelling (toast, white flowers and boxwood). Brianna reminds me a little of Sauvignon blanc in that way - lots of intense esters and thiols! This pet nat is so fun to make - a cool to cold fermentation in stainless keeps the wine as bright as possible, and we just watch the brix levels drop slowly. The decision to forgo disgorging means there will be sediment in the bottle.

Petillant naturel made with Somerset Seedless table grapes. Leaner, with notes of watermelon rind and cinnamon. This wine is near and dear to my heart. It is the last vintage of Somerset Seedless farmed by visionary viticulturist Nate Nelson. Somerset is technically classified as a table grape (and is indeed seedless!). The skins are a bright magenta color and when pressed the juice runs the color of pink lemonade. The grapes themselves are so delicious that I wanted to make a style that stayed as true to fresh fruit as I could. Pet nat is the answer!

100% LaCrosse from Three Branches Vineyard in Iowa County, and Possum Ridge Vineyard, near La Farge, WI. Barrel fermented and aged on lees for 22 months. Textured and bright with notes of salty lemon curd, wild herbs and almond. I love LaCrosse because, like Chardonnay, I think of it as a blank canvas for winemaking. My goal was to make a lush, rich, creamy style with a squeeze of lemon. This might be the perfect food wine and I often think of it in the same family is white wines from Jura, Savoie and Austria.

A textured and rich white blend of LaCrescent, Frontenac gris and Frontenac blanc. 50% of the fruit was grown at Windy Willow Vineyard in Fillmore County, MN, and 50% from vineyards in Wisconsin LaCrescent is the aromatic varietal of the three - lots of perfumed florals and candied citrus. Frontenac blanc and Frontenac gris bring more focus and texture to the blend. Lots of skin contact in this wine as well, which helps give a savory base note to build on.

A copper-colored, ramato style orange wine. Red raspberry, lime leaf and warm mineral. Oxidative and dry. Antipodes (an-TIH-puh-deez) is a Greek word that means the point on the globe that is exactly opposite to where you are standing. The name feels appropriate for a wine that uses white wine grapes to make a red wine style. This is perhaps the most unusual wine I make. The color is remarkable! And the wine feels like the love child of a rich white wine, a textured red wine, and a dry, unfortified madeira.

2022 Social Creature Rosé

A deep-colored, dry rosé. Bright fruit, white flowers, blood orange, and sweet sage. Social Creature is built around the Sabrevois grape, which is a slipskin red variety that gives up its color instantly. During fermentation, the wine develops fruity, bubble-gum aromas, but around the time it goes dry, the aromas become much more umami and minerally. Small blending decisions are made, mostly to boost texture and alcohol percentage. Sabrevois is sometimes picked as low as 14 brix. But the goal is always the same - build a flavorful, fun, bright, and complex pink wine.

Switch Theory blends across vintages and varieties and each release is a little different. Version 4 has a little more texture than previous bottlings. The same energy and liveliness we love, but with some darker fruit. Each version is different, but the personality of the wine stays quite similar. A lighter bodied red that can be served chilled, or room temperature.

100% Frontenac noir from Windy Willow Vineyard in Preston, MN. Whole-cluster fermented and aged on lees in neutral barrels for 12 months. Bright red fruit with subtle earthiness and juicy acidity. Delicate and complex. Frontenac makes a juicy, dark style. There's lots of acidity to work with, and we get some delicious, savory blackcurrant flavors as well. I often describe the flavors as leaning towards Cabernet sauvignon or Merlot, or Nero d'Avola, but with a much more velvety and generous texture.

A blend of Petite Pearl and Marechal Foch. Aged in neutral oak for 22 months. This wine is really difficult to put together. Marechal Foch is one of the earliest French-American hybrid grape varieties. It was developed in Alsace over a hundred years ago. The word 'delicate' covers all bases - flavor, texture, tannin, acid. But, there's a layered complexity to the fruit as well. Foch isn't grown around here much anymore. It's finicky in the vineyard, the vines are old, and there always seems to be a great new variety that will solve all our farming challenges so most growers aren't replanting Foch. Petite Pearl is one of those "great new varieties". It has its own challenges but has proven to be a good foil for Foch. In this blend, the Petite Pearl fills in some of the lacy texture of the wine and supports some of the darker flavors.

St Pepin, whole cluster fermented with 100% wild yeasts and aged in neutral barrels. St. Pepin is full of stone and pome fruit flavors like asian pear and white peach. The inclusion of stems and skins make this wine technically 'orange' and gives the wine more structure and tannin. The extended barrel aging on lees builds palate weight and length. Reminiscent of (and much more interesting than) a round, balanced chenin blanc.

Current notes: 2018 is the only vintage I made Sound of Memory with 100% Foch. It reminds me a lot of cru Beaujolais. There's a really fine structure here. It's not showy or flashy, but it is very beautiful. Lots of earthier, forest-y flavors, with some savory cranberry and currant. From release: 100% Marechal Foch. Whole-cluster fermentation, aged in stainless steel for 18 months, under pellicle. Dark and brooding with notes of cranberry, apple skin and tobacco.

Current notes: It's hard not to feel nostalgic about this wine. I got to work with Harrison Hollow vineyard only twice before the owners retired and sold their land. The vineyard was over two decades old, and the care and knowledge Lois and Tony Sterling applied to their land was incredible. The 2018 Rivals bottling has always been oxidative, with saline and mineral notes. That's still the case, but the cream, spice, and warm woodsy notes are now much more prominent and they act as base notes for the more ethereal citrus flavors. From release: 100% LaCrosse from Harrison Hollow Vineyard in Viroqua. Barrel fermented and aged on lees for 18 months. 30 parts sulfur added at bottling. Bright and minerally with notes of lemon zest, wild herbs and almond.
