Production of sparkling wines with the traditional method involves allowing the secondary fermentation to occur in bottle, in contact with the yeast, which results in a high-quality sparkling wine possessing complexity and delightful mousse qualities. On the nose, this 2021 Blanc de Blancs displays notes of yellow nectarine, honey, cantaloupe, and a hint of yellow citrus. On the palate, this sparkling wine exhibits great minerality and qualities of green apple, melon, lemon zest, and a hint of flint. 100% Chardonnay
