After a native fermentation and 12 months in barrels, this single clone (Dijon 115) Pinot Noir is showing beautifully. In this vintage, we included about 20% whole cluster to complement the fruit's delicate structure with the stem’s spicy tannin. Aromatically this also added spice components, with notes of clove and savory herbs behind the classic cranberry. On the palate, it shows a lovely acid highlighted by deep fruit and earth, with superb concentration from one of the driest years on record for the Russian River Valley AVA. The finish is long and satisfying, with notes of Earl Grey tea and earthy hints that add elegance to the wine. 20% new French oak (tonellerie Damy). 100% Pinot Noir.

This is the purest, darkest Chocolate. Its creamy texture has a balanced flavor that is rich, not bitter with notes of dark caramel, fudge + dried cherry. We use Cacao (cocoa beans) from the mountainous, tropical regions of Guatemala, which are carefully roasted to bring out their rich flavors. It is then refined with a pinch of Sea Salt, Organic Cane Juice and molded into 2.0 ounce bars.
