Our third release of this 100% estate single varietal, produced from our organically grown Foxwhelp apples. The Foxwhelp is an English bittersharp cider apple, known for its aromatics and versatility, one of the oldest surviving cider apples still in use, originally from the Gloucestershire area. Historically a single strength cider from this apple would fetch the same price on the market in London as imported French Wine.

Alpenfire Cider's Rosy Pommeau ~ Rich, red, high acid juice from Aerlie red apples is partially fermented before halting the fermentation with the addition of the eau de vie. The eau de vie is distilled from our estate organic cider varietals and locally grown organic heirloom apples. Once blended pommeau is aged in neutral oak for 15 + months before bottling. Great as an aperitif or accompanying dessert.

The Yarlington Mill originated in Somerset, England in 1898, it is a true bittersweet with great aromatics. Smooth yellowish skin, slightly blushed with a hint of russeting in the cavity. Light astringency & sweet candy like flavors make this apple a treat to work with. Grown in the maritime climate using organic methods in our estate orchard.

This is our first foray into the world of Pet Nat cider (naturally Petillant). This style of cider making is familiar to us from our years of producing bottle conditioned ciders but this takes it to another level. Instead of fully conditioned and aged cider being treated to a small dose of sugar to feed the yeast and build carbonation this approach stops the natural fermentation before completion by bottling, preserving the fruit sugar.. So while it seems like the very simplest way to make cider it actually comes with it's own set of challenges. We think the wonderful fruit aroma and delicious freshness of this batch makes it worthwhile.

This harvest of Golden Russet is highly flavored & intense with fruity apple flavor, acid & tannin. We just waved a wand of oak stave over it and yet the oak aroma is the first to hit the senses. Wonderful served with rich dishes like braised lamb shank.

Made from late season, estate grown bittersweet apples. Vilberie, Dabinett, Yarlington Mill and other apple varieties give this cider a traditional tannic flavor and astringent mouth feel. Ember is bottle conditioned for a cracking carbonation and unfiltered. A hint of sweetness brings out a subtle caramel flavor without masking the complexity of these apples. This cider will pair well with most meals but particularly chicken and seafood dishes.

Cortland is a wonderful and finicky apple. At it's best it is vinous and rich, reminiscent of a New Zealand Sauvignoon Blanc. This batch was aged in rye barrels that had also been used to age mead from The Mead Works @ Wilderbee Farm. With it's full body we decided it didn't need to be carbonated. We hope you enjoy it as much as we have!

This cider cuvée has a classic balance of traditional & heirloom apples. Blended in small batches, each representing the small growers we work with. The cider apples are organically grown in our orchard while the heirloom apples come from two other organic growers, Lazy J Farm in Port Angeles, Rainshine Farms in the Willamette Valley and Heirloom Orchards in Hood River. Cider apples provide depth of flavor and a tannic sizzle while heirloom apples provide acidity and bright flavors. Cool fermentation, lengthy maturation and no filtration create complexity and rich body. Try this well rounded orchard based cider with breads & cheese, burgers, or just about everything.
