Primitivo, the signature varietal from our Cerro Santo estate vineyard, is bold and fruity when young, but our reserve wine, aged for 20 months in both French and American oak, is softened and mellowed, while retaining the substantive character of this already outstanding vintage. Double-barrel aging has produced aromas of vanilla, toasted coconut, and cinnamon in addition to the wine’s flavors of dark cherry, coffee, and chocolate. Our Riserva is a truly special wine, perfect for sipping on its own, or as a complement to a special meal.
The Primitivo grape, although genetically similar to the Zinfandel variety, demonstrates distinct growth characteristics and thrives in our hot, dry Texas High Plains climate, just as it does in the Puglia region of Italy, its primary growing region. Our medium-bodied red is unique among our other varietals, with dark cherry and peppery flavors nuanced by aromas of black currant and leather. Our classic Primitivo pairs well with BBQ, pizza, and hard cheeses like Manchego and aged cheddar.
Our Cabernet Sauvignon vines were the first vines planted at our Cerro Santo estate vineyard, and are grown on their own roots, making them perfectly true to their French heritage. We took cuttings from one of the oldest vineyards on the Texas High Plains, so these grapes also have a long Texas pedigree. They produced a rich and full-bodied wine with aromas of bell pepper and spice, followed by lovely blackberry and vanilla flavors. Pair this classic wine with a hearty burger, sharp cheddar, and semi-sweet dark chocolate.
Our hearty Syrah vines perform exceptionally well in our Texas High Plains Cerro Santo Vineyard, and the smoky, full-bodied wine we create from these grapes is true to traditional Syrah characteristics. Aromas of plum and sweet blackberry prelude flavors of vanilla, baking spices, and black currant. Perfect complements for our rich Syrah are grilled and BBQ meats, aged cheeses, and chocolate-covered strawberries.
The Merlot vines planted in our Cerro Santo estate vineyard are grown on their own roots, and therefore true to their French origins. Few New World vineyards can grow ungrafted French varietals successfully, but our Merlot vines thrive in the dry, gravelly soil of our Texas High Plains vineyard. The full-bodied red they produce exhibits flavors of blackberries and dark chocolate with aromas of vanilla and cream, a result of the double-barreling process in which the wine is exposed to both French and American oak. Our smooth Merlot is a perfect complement to pasta and meat sauce, roasted veggies, and garlic and herb cheeses.
The vigorous Chenin Blanc vines which made this wine are grown on our Cerro Santo estate vineyard, whose soil lends distinctive aromas to our award-winning Texas grapes, differentiating them from their French or South African cousins. We’ve made our 2019 vintage in a dry style, with bright, vibrant aromas of yellow apple and citrus blossom, followed by appealing buttery flavors balanced by sweet Meyer lemon. Our lovely Chenin Blanc pairs well with pulled pork, fish tacos, and creamy cheeses like brie and havarti.
Our superb Malbec is handcrafted from superior grapes grown at neighboring Babbitt Family Vineyards. The grapes were lovingly hand-harvested from young vines, producing a full-bodied and well-balanced blend of dark red fruit with complementary peppery notes, and aromas of black cherry and plum. It pairs perfectly with spicy red meat dishes, a good steak, and smoked cheeses. Our Malbec stands toe-to-toe with the best wines of Argentina, but we believe that the Malbec varietal really finds its feet here on the Texas High Plains.
Sauvignon Blanc is the perfect introduction to light and refreshing dry white wines, and ours is particularly special because it’s grown in our Texas High Plains terroir, which imbues the grapes with their own unique characteristics. This wine displays vivid aromas of lime and lemongrass, and tangy fruit flavors of white peach and passion fruit. Our lively Sauvignon Blanc pairs well with grilled chicken or fish, Mexican food, and soft herbed cheeses.
Made from Primitivo grapes, the signature varietal at our Cerro Santo estate vineyard, our lovely 2019 “Primrose” rosé captures the color of a West Texas sunset, and is a perfect example of the harmonious blend of climate and craft. A refreshing dry wine with amazing tropical aromas of banana and mango followed by raspberry, pineapple and grapefruit on the palette, our Primrose pairs well with any fresh, light meal, but is also a perfect stand-alone accompaniment to a beautiful sunset.
Our bright and uplifting white blend is named for one of the first tenets of Adelphos Cellars: that wine has the power to make friends of us all. The white varieties we’ve incorporated in our blend are among the oldest in the wine world, and have grown alongside one another in the sun and rain and wind for generations, making them old friends, too. Our white blend combines several stellar Texas varieties and displays aromas of bright citrus and stone fruits. It pairs beautifully with light, warm weather meals, creamy cheeses, and good conversations with old friends.
The most prized member of the Muscat family in Italy, Muscat Canelli thrives in our hot, dry Texas High Plains climate, which is similar to its native Mediterranean home. Our slightly sweet 2019 vintage displays traditional Muscat aromas of honeysuckle and ripe peach, balanced by citrusy and tropical fruit flavors of grapefruit and pineapple. It pairs well with spicy foods, Asian dishes, and a luscious cheesecake. Our Muscat Canelli is a wonderful celebration wine, whether you’re celebrating a special occasion or just a peaceful evening at home.
Cerro Santo Vineyard’s original plantings included the vines from which this Riesling is made. It reflects the character of the land from which it comes, and embodies the color of summer’s long, bright days on the Texas High Plains. Our 2018 vintage is true to traditional Riesling flavors of green apple, citrus blossom, and white peach, with a lovely creamy finish. Our dry Riesling pairs well with fish, Asian dishes, and soft, creamy cheeses; serve chilled and enjoy it with good friends and family.
The 2018 vintage of our late harvest Riesling is a full flavored, semi-sweet white wine with distinctive Riesling notes of green apple, citrus blossom, delicate peaches, and honey. It pairs well with any spicy meal, as well as shrimp, white pizza, and goat and other soft cheeses. Our sweet Riesling also stands alone as a lovely sipping wine and a perfect complement to good conversation and friendship.
Our Texas High Plains Cabernet Sauvignon from our Cerro Santo estate vineyard displays characteristic aromas of blackberry, mint, cloves, and cedar, but after an extended aging period in exclusively French oak, now carries additional flavors of chocolate, leather, tobacco, and coconut. Our barrel-aged Cabernet Vintner's Reserve is a perfect accompaniment to rich, flavorful meals, grilled meats, and nutty, aged cheeses.
