Start every occasion with sparkling wine. We harvested the fruit in 2020 and took our time to ferment and age the wines over twenty months. This 100% Chardonnay sparkling follows the traditional Methode Champenoise indicating that the secondary fermentation happens in the bottle. This dry, delightful sparkler bursts its bubbles in celebration of whatever the night brings. The '1971' is a dedication to Don & Mary, my parents. The inaugural release celebrated their fifty year anniversary.
