A bochet is made by fermenting burnt honey, which tastes much better than it sounds. Our version, made with buckwheat and clover honey, has been described as reminiscent of cigar ash ("but in a good way"), coffee, rum, and even figgy (as in the pudding). Never fear, you won't have to sing to get your own, be it a jiggerful or more.
