This complex, medium body Pinot Noir shows white pepper and dusty raspberry on the nose. Dark cherry, spices like cloves and dried sage request attention also. A beautiful salinity leads to forest floor notes on the palate, unique to our cool coastal climate vineyard.
Food Pairings: Grilled Steaks, lamb, anything smoke flavored; also salmon, chicken with cream and capers, dark chocolate.
Notes
Skin contact for 21 days. Long, cold soaks to slow down fermentation. Aged on leas 10 months in French Oak barrel with 25% new oak.
The pinot noir grapes in this wine were harvested entirely from Ten Peaks Vineyard.
