Our Blanc de Noir is a refreshing sparkling wine made in the traditional, Méthode Champenoise style. All fruit is Estate grown Pinot Noir from our cool, coastal climate vineyard, Ten Peaks Vineyard.
Citrus and white peaches on the nose. Soft tannins and leather gently linger on the mid-palette which is a signature flavor of our vineyard’s terroir. A soft, creamy finish brings a touch of vanilla that rounds out the flavors beautifully.
Food Pairings: Everything goes with Sparkling! From soft cheeses to creamy pasta sauces with a savory herb like sage or basil. Fish tacos, fish en papillote, pecan encrusted halibut, sour cream and dill salmon. For dessert, vanilla creme brulee is exquisite.
