Our Chardonnay is made from 100% grapes from Casanel Vineyards. Fermented in Stainless steel, with 34% reserved for blending back in. 66% aged sur lie for 1 month in French Burgundy barrels. No Malo-lactic fermentation. Flavors of tropical pineapple, tart citrus, and delicate pastry.

WINEMAKING NOTES
Our Chardonnay is made from 100% grapes from Casanel Vineyards. After hand-harvesting and
sorting in the vineyard, the grapes were gently transported in small lugs and were stored for one
night in a cold room. The day after, the grapes were sorted again on a sorting table before pressing.
Cold-settling occurred for one night, followed by alcoholic fermentation in stainless steel tank.
Toward the middle of the fermentation, 32% of the juice was sent to French Burgundy barrels to
finish the fermentation, while the final 68% remained in stainless steel tank. After a few weeks of “sur lie” aging (aging on the lees while in oak barrel) and a gentle “bâtonnage” (lees stirring), the wine was racked off the lees and sent back into oak barrels to continue the aging process. In July, we proceeded to protein stabilization and cold stabilization before hand-bottling on the Estate, which occurred in August

Our Pinot Gris is made from 100% grapes from Casanel Vineyards. After hand-harvesting and sorting in the vineyard, our grapes were gently transported into small lugs and were stored for one night in a cold room. The day after, the grapes were sorted again on a sorting table before pressing. Cold-settling occurred for two days, followed by alcoholic fermentation in stainless steel tank. Toward the middle of the alcoholic fermentation 50% of the juice was transferred to American oak barrels for aging, to provide a fuller body and unique aroma. In June, we proceeded to protein stabilize before hand-bottling on the Estate.

WINEMAKING NOTES
K2 is a Bordeaux blend made from 21% grapes from Casanel Vineyards and 79% grapes from 2 Virginia vineyards. The blend consists of 52% Merlot, 27% Cabernet Franc, 15% Cabernet Sauvignon, 3% Carménère and 3% Petit Verdot. These different varietals were picked at different times to respect their respective ripeness time and were treated separately in tanks and in barrels until blending.

After hand-harvest and sorting in the vineyard, the grapes were gently transported in small lugs to the winery where they were destemmed, sorted again on a vibrating sorting table before to be sent in a stainless steel tank by gravity. After 2 to 4 days of cold maceration depending on the varietal, the alcoholic fermentation was started and occurred around 75 to 80 degrees F. Pump-overs were done every day during the fermentation and also during the short warm post-maceration, that lasted about 2 to 3 weeks (again depending on the varietal – Cabernet Sauvignon and Petit Verdot had both a longer post-maceration). The different wines were then pressed and sent to barrels where the malolactic (ML) fermentation occurred rapidly. After racking from ML, these wines returned to barrels to be aged for 21 months entirely in French oak Bordeaux barrels (30% new, 30% in 1-year old, 30% in 2-years old and 10% in 3-years old barrels). The final blending occurred at the end of February 2017. After a small fining, the wine was racked, filtered and bottled.

WINEMAKING NOTES
Our Cabernet Franc is made from 100% grapes grown in Timberville, Virginia, located in the Shenandoah Valley. After hand-harvesting and sorting in the vineyard, the grapes were gently transported via small lugs to the winery where they were destemmed and sorted again on a vibrating sorting table before being sent to stainless steel tank by gravity. After 3 days of cold maceration, the alcoholic fermentation was started and occurred around 55 degrees F. Pump-overs were done every day during the fermentation and, also during the warm post-maceration, that lasted about 1-2 weeks. This wine was then pressed and sent to barrels where the malolactic fermentation occurred rapidly. After racking from malolactic fermentation, the wine returned to barrels to age for 22 months entirely in French oak Bordeaux barrels (34% new, 66% neutral oak barrels). No fining of the wine occurred. After the appropriate aging time elapsed, the wine was simply racked, sterile-filtered, and hand-bottled on the Estate.

34% neutral French oak barrel). No fining of the wine occurred. After the appropriate aging time elapsed, the wine was simply racked, sterile-filtered, and hand-bottled on the Estate.

Punch-downs were done by hand every day during the fermentation and, also during the warm post-maceration, that lasted 10 days. This wine was then pressed and sent to barrel where the malolactic fermentation occurred rapidly. After racking from malolactic fermentation, the wine returned to barrel to age for 20 months entirely in French oak Bordeaux barrel (50% new French oak, 50% once-used French oak barrel). No fining of the wine occurred. After the appropriate aging time elapsed, the wine was simply racked, sterile-filtered, and hand-bottled on the Estate.

WINEMAKING NOTES
Our sparkling is made from 100% Norton grapes produced in the Méthode Champenoise-style. After hand-harvesting and sorting in the vineyard, our grapes were gently transported into small lugs and then stored for one night in a cold room. The day after, the grapes were sorted again on a sorting table before being pressed with a specific sparkling pressing program: only the “Coeur de cuvée” or “middle juice” from the press was used to make this sparkling. Cold-settling occurred for one night and then alcoholic fermentation began in stainless steel tank. This base wine was fermented and aged entirely in stainless steel. In April of the following year, the base wine underwent secondary fermentation in bottle after the addition of yeast, nutrients for the yeast, and sugar. The bottling was done by hand and the bottles were stored in layers via wire cage to be aged on lees. After 22 months, we proceeded to manually disgorge (or “remove”) the yeasts precipitate (or “lees”) from the bottles and then added a dosage liquor to each bottle (the dosage liquor contained a high concentration of sugar to result in a final product at 2.7 g/l). We then completed bottling by replacing the capsule closure with natural cork and wire.
