The fruit was picked over a period of 17 days in late August to mid September. Early picks had shocking & refreshing (compared to 2014/2015) overnight pH’s. Over half the ferments started naturally after moderate cold soaks. Fermentations occurred in 1 to 1.5 ton lot sizes over a period of 10-14 days. The wine was barrel aged for a period of 14 months in French Oak, 50% of it new. The final blend is a combination of five different Pinot Noir clones, all sourced from Dion Vineyard. The vines of these blocks were between 15 to 40 years in age.
Tasting Notes:
A spicy nose starts out this wine, with a solid black cherry and red plum core. The initial taste is of ripe bing cherries, an accent of Granny Smith apples, and a finish with deep black cherries, juicy red figs and a good spice of clove at the end. We really like the tannic structure of this wine, balanced with acidity and red fruits.

The vineyard was harvested over a period of 11 days in mid to late September. Only short cold soaks were required to achieve full color and flavor, with many fermentations starting naturally. Fermentations occurred in 1 to 1.5 ton lot sizes over a period of 7-10 days. The wine was barrel aged for a period of 14 months in French Oak, 50% of it new. This wine is sourced solely from a block of self rooted, dry farmed Pommard 39 years in age.
Tasting Notes:
Our 2015 Old Vine Pinot Noir has a light bright color ruby that is pretty typical for our wines from Laurelwood soils. It exhibits light grained tannins and ripe strawberries, with hints of pomegranate, dried herb, and finishes with a nice tart structure. The acids are bright, emphasizes red fruit flavors of tart cherries, cloves, graham crackers and cinnamon and finishes cleanly.

Technical Notes:
Our first ever sparkling production, the 2015 was picked on the 27th and 29th of August. The grapes were whole cluster pressed, with press fractions being determined by close monitoring of taste & pH.
Cool primary fermentation occurred over a period of weeks in stainless steel. Primary blending was done in January 2016, with bottling and secondary fermentation beginning in March of 2016. The wine was en tirage for 20 months. Dosage trials were done in January of 2018 with Disgorgement and final bottling completed at the end of February 2018.
Tasting Notes:
The nose exudes biscuit, caramel, and rose petal. Entry of lively bubbles, strawberries and maraschino cherries – has a nice mid-palate of toasty shortbread and richer green apples and raspberries with a touch of sour cherry and a slight tannic interest. The finish is long and pleasant, with a hint of fresh grass, acidity, toasted pine nuts, and pink grapefruit.

Very crisp, aromatic style – we do leave a little residual sugar, just under .5% because we believe PG can be a bit bitter when completely dry.
Aromas of freshly mowed grass, lemon peel, and daisies
Grapefruit and honey on the palate, with a nice long finish and a pleasing tartness.

Graham cracker crust filled with just a touch of butter, bing cherries, and a secret ingredient (no secrets, this is 100% 41 year old self-rooted, dry farmed Pommard – I meant the pie).
