Our first-ever traditional method sparkling wine is back! After 26 months on the lees, it is toasty and rich with beautiful tension from the classic 2019 vintage. An extra brut style, it will delight lovers of the dry style.
100% estate grown Chardonnay was grown using biointensive practices. Grapes were hand-picked and whole-cluster pressed. The base wine was fermented in tank and transferred to bottle for the secondary fermentation in June 2020. Fermented in the bottle and rested on the lees for 26 months before disgorgement. 2019 was an ideal vintage for making sparkling wine due to the high acid in the grapes from cool weather.
This is the second disgorgement of our 2019 Blanc de Blancs: 48 cases were disgorged on August 8, 2022. 125 total cases were produced; the first disgorgement of 55 cases was released in fall of 2021. Remaining cases will be disgorged in later years.
Serving Notes: Chill well before serving. Open over the sink in case of excess mousse. Pour gently to avoid foaming. This complex, extra brut style will shine brightest when paired with a main course or elegant, artisan cheeses.
