Wild fermented sparkling cider. Bitter-sharp apple Kingston Black, which offers both acid and tannin, is widely regarded as the King of single varietal cider apples. Fermented and aged in barrel for 1 year. Re-conditioned with fresh Kingston Black juice from the new harvest. Col fondo. Raw, unfined and unfiltered.
Custardy, caramel-tinged cider with citrus fruit and arboreal spice. Serve at 45-55 degrees in a wine glass.
