A traditional style of dessert cider originating in northern France. Similar to a port or sweet sherry, partially fermented cider is fortified with brandy of apples and pears to arrest fermentation, and preserve natural sweetness. Matured for years to develop an oxidative profile bearing notes of pecans and buckwheat honey. An ideal aperitif.
