Wild fermented sparkling Perry. A blend of cultivated Perry pears and wild foraged pears. Fermented in stainless and aged for over 1 year in neutral French oak. Bottled Méthode Traditionnelle and conditioned using tannic wild foraged pear juice. Aged two years in bottle. Riddled and disgorged. Raw, unfined and unfiltered.
Pearlescent in the glass. Zesty nose of key limes and tamarind paste. Lingering notes of fennel and elderflower. Crisp, light and remarkably dry for a pear cider. Serve slightly chilled in a wine glass.
