Winemaker's Notes:
This is the first wine we created - it's a nod to a type of mead called "cyser", where honey is fermented with apple juice. However, we sourced local apples and honey, then aged ours in bourbon barrels to add another level of complexity. It's surprisingly big for an apple wine, with bright apple flavors layered over a honey foundation. The barrel adds a little vanilla, body, and a touch of heat on the finish. This semi-dry wine should work well with holiday meals, but is really impressive all by itself, lightly chilled.
