Sparkling Wine of Apples, Grapes, Pears & Quince.
Multiple long macerations of apple pomace with freshly pressed grape skins and a touch of pears & quince, across multiple harvest years. Pressed, fermented and aged in neutral French oak barrels. Bottle conditioned with fresh apple juice and aged for an additional year. Wild fermented with native yeast, unfined and unfiltered. Serve slightly chilled in a wine glass.
