Island Winery in Hilton Head, South Carolina has created a Low Country interpretation of this sauce by using oak-aged sherry and smoky peppers, resulting in a flavorful accompaniment to local dishes like shrimp and grits, crab cakes, warm crab dip, and all types of fish soups, chowders, and stews. This sauce also enhances the flavor of grain-based dishes using lentils or beans.
