The 2018 Muddy Paw Cabernet Sauvignon was open top fermented with an addition of French Oak chips. The primary fermentation lasted 10 days with an extended maceration of 7 days. The Cabernet was then taken through a secondary fermentation and allowed to age on French Oak for an additional 6 months.
The 2018 Cabernet Sauvignon is a dense, rich and layered wine with aromas of blackberry, currants, and tobacco. Flavors of jam, vanilla, and spice compliment a smooth, sustained finish. This Cabernet pairs well with braised short ribs, wild mushroom dishes, and goat cheese tarts.
