This was a fun trial after finishing production on the 2018 Cabernet Sauvignon. The idea came to me to try to age some of the 2018 lot in both wine and whiskey barrels. The individual slats of wood that make up a barrel are called staves. There were two different kinds of staves used for this wine: medium toasted French oak and charred American oak. Therefore, I decided to name this wine Dual Staved. Is “staved” a real word? Not sure, but it sounds neat. This wine spent about three months in French oak barrels to get some light vanilla and toasted aromas. We then got our hands on some genuine Jack Daniels barrels from the factory in Lynchburg, TN. I racked the wine out of the wine barrels and directly into the whiskey barrels. The charring on the inside of the barrels provides another layer of complexity by adding in some charcoal and black olive notes. Meanwhile, inside the grain of the wood of the staves, there was a small amount of the whiskey remaining. This provided a boost to the nose providing some caramel and tobacco aromas. In the end, the wine was only in the Jack Daniel’s barrels for three months, but the result is something that is a touch different than your average Cabernet Sauvignon. It was bottled on May 22nd, 2020.
